Power Breakfast: Carrot Cake Overnight Oat
The common idea that most of us have for the term power breakfast is breakfast that is nutrition-packed. However, according to Cambridge Dictionary, it actually refers to “an occasion at which people eat breakfast while they are working and talking about business”. Is this new to you? It sure is to me! Anywho, the point of this article is to share with you a power breakfast recipe that you should try regardless of whether or not you are in a rush!
What You Need:
3/4 cup of almond milk
3/4 cup of regular rolled old fashioned oats
2 tbsp of finely shredded carrots
1 tbsp of raisins
1/2 tsp of cinnamon
1 pinch of salt
1/2 tsp of vanilla
2 tsp of maple syrup
1 tbsp of shredded coconut (optional)
1 tbsp of chopped walnuts (optional)
How To Make It:
- Add milk, cinnamon, vanilla and maple syrup in a mixing bowl. Mix till they are well combined.
- Then, add in oats, finely shredded carrots, raisins, shredded coconut, and chopped walnuts.
- Transfer the mixture into a mason jar or any air-tight container. Leave it in the refrigerator for at least 5 hours or overnight (ideally).
- You may heat it up or eat it directly!
